Road riders have suggested getting the largest frameset that fits you, while world-class tourists have suggested getting the smallest frameset that fits you. Whichever, the one frameset VO currently offers which you could consider is the Polyvalent frameset. It has features both new and old, including for modern disc brakes with thru-axle hubs, provision for single, double, or triple cranksets and other old school features. It can carry both front and rear cargo loads but does not handle in the way a traditional touring bike would as it has quicker steering.
Honestly, the VO Polyvalent is about the last of a vanishing type of frameset.
